In preparation for a sweet new year, here is Syma’s recipe for Dairy Free Strawberry Ice Cream.
Ingredients:
4 eggs, separated
1/2 cup sugar
1/2 teaspoon vanilla
24 oz package of frozen strawberries in syrup, thawed.
Instructions:
Beat egg whites with sugar until stiff. In a separate bowl, beat egg yolks with strawberries and vanilla. Fold the stiff egg whites into the strawberry mix. Freeze until firm. Remove from freezer 5-10 minutes before serving. Variation: Substitute 1 teaspoon powdered coffee for vanilla and 4 teaspoons of powdered cocoa for the strawberries.
Debbie’s Creamy Carrot Soup
Ingredients:
1 Tablespoon parve margarine
3 medium leeks, thinly sliced white parts
1 pound of carrots, thinly sliced
1/2 pound of white potatoes, cut small
1 rib of celery, sliced
5 cups chicken stock
1 1/2 teaspoons dried tarragon
salt and pepper to taste
Instructions:
In a large pot, melt margarine and saute leeks. Add the rest of the ingredients, bring to a boil, and then cover and cook on medium heat for about 20 minutes or until the carrots and potatoes are soft. Puree and then continue cooking for another 15 minutes.
